The Meaning of Great Circles

To get from one place on the earth to another, the shortest distance between two points is the "great circle" route.
For example, to get from Houston to Delhi (nearly the same latitude), the shortest way is neither East nor West, but actually North. 
If the round earth is projected onto a flat map, the great circle path no longer looks like the shortest route.
